Peanut Butter Rocky Road

Hello everyone, 
I had this post on my previous blog and I absolutely must have it on here. I have edited small bits, but nothing to vast.


I prefer to post healthier recipes, but they're are just some things you have to have - this is one of them.
I know you could use different ingredients for a healthier option, but I haven't quite worked up to that - though I will write up a recipe as soon as I perfect it!
This one is super quick, easy and delicious.





*Note: I won't give out exact measurements of ingredients because you'll add as you go depending on your preferences. There needs to be more cooking chocolate than any of the other ingredients.
Ingredients:

  • Dark chocolate
  • Peanut Butter
  • Marshmellows - mini's or chopped

  • Nuts - I chose pecans, but any is okay - chopped if too big

  • Shredded coconut

You'll need either cupcake silicon moulds or a baking tray with baking paper. I use the moulds as it's instantly served and you don't have to cut it.
Method:
1. If your cooking chocolate isn't already in pieces, chop or break into pieces and place into a microwave safe bowl. Melt in the microwave or stove top if you prefer - to avoid burning chocolate, make sure you are constantly watching it *microwave times will vary.
2. Give the chocolate a stir to make sure it's all smooth and then add all ingredients except peanut butter into the chocolate and stir.
3. Spoon a small amount of mixture into moulds or tray. Spoon peanut butter into the middle of the mixture. Spoon more rocky road mix on top of the butter. Place in the fridge to set.
4. The hard part - wait.
How easy was that? There is no catch. I am hungry thinking about it. You just have to wait until it sets, but I promise you it doesn't take long at all.

Healthy Apple Crumble Recipe

I actually posted a similar recipe (with blueberries) on my old blog, I was going to post it again but realised the pictures were rubbish. I wanted to make it again for both deliciousness and photos to repost however, I knew Beau (the boyfriend) would prefer apple over blueberries, so here is a healthy recipe for Apple Crumble... enjoy!

Ingredients:
  • 2 small-medium apples, diced
  • 120ml milk (I used unsweetened almond milk for a lower calories)
  • 2 tsp cinnamon + a little extra to sprinkle on top
  • 1 tbsp sweetener (stevia, maple syrup, honey or agave)
  • 1/4 - 1/2 cup of desired nuts *optional
  • 1 1/2 cup rolled oats
  • 1/2 cup flour
  • 1-2 tbsp butter *can omit, but will be a lot more dry and less rich

Method:

1. Preheat oven to 180 degrees celsius or 160 fan force and grease oven safe dish with butter or cooking spray *It will stick if you don't!

2. In a mixing bowl add apple, milk, cinnamon, sweetener and nuts. Mix using wooden or mixing spoon.

3. In a separate bowl, add butter and microwave until soft but not entirely melted. Add in oats and flour and mix together well before adding to the first bowl. Mix everything together.

4. Place your mixture in your dish and press down with a back of a spoon to help pack it all in. Sprinkle cinnamon on top.

5. Place in oven for 35 minutes (preferably on the middle tray of the oven). For the last 3-4 minutes turn the temperature up higher. Once time is up, turn it off but leave it in the oven for another 5 minutes before taking out.

6. Ready to serve! I served mine with an unhealthy ice cream, but you can find lower calorie ice creams or make your own. In the past I have also served with a low fat custard.

*Feel free to make with other fruits! As I said earlier, I posted a recipe on my old blog using blueberries - just take out the apple and add approximately 1 1/2 cups of blueberries or any other berry you desire.

Let me know if you make this. Though you might have to wait about 40 minutes while it's in the oven, it'll be worth it! This recipe serves about 4 hungry humans.

A Simple and Basic Pancake Recipe

Do you love pancakes? Of course you do.
Okay realistically, if you don't... That's more for me then!

This will be a super simple and basic pancake recipe.

The recipe I give you will be dairy free (minus the yoghurt topping) but if you prefer dairy, that is a-okay.


There was one week where I had pancakes for breakfast 4 out of 7 days. Obsessed? Perhaps.

*For less dishes (always a plus), I measure the flour and milk in tablespoons instead of cups, as this is a Single Serving. Ingredients list doesn't include toppings
Ingredients:
4 - 5 tbsp wholemeal flour (others ok too)
2 - 3 tbsp soy or almond milk
1 egg or 2 egg whites
1/4 tsp baking soda
1/2 tsp vanilla essence

Method:
1. Whisk egg before adding the rest of the ingredients. Mix all together - but don't over mix.
2. Grease your pan and make pancakes! I make smaller pancakes and stack them - will make 3 - 5 when smaller.
3. Add desired toppings.

I kept it healthy and added half a banana - sliced, and a spoonful of greek yoghurt and the number one topping: maple syrup! Mine was a sugar free syrup (purchased from Coles/Woolworths).
Be careful what you add, you don't want to be adding sugary and fatty ingredients. Fruit always works with a little honey or maple syrup and maybe yoghurt.
I use soy or almond milk because that's just what I have, and they're also low calorie.

More delicious pancakes...
This recipe has lots of room to change up a few things. I have made chocolate pancakes based on this recipe and it has worked really well. I reduced the flour to 3 - 4 tbsp, added 1 tbsp cocoa powder and 1 tbsp of stevia.
For peanut butter pancakes. Reduce the flour by 1 tbsp and add 1 tbsp of peanut butter or pb2 (lower in fat and calories).
You can add protein, fruits (blueberry and/or banana work best I think), chocolate chips, it is never ending!!!
